We acknowledge the Wiradjuri People as the Traditional Owners of the land on which this beer was produced. We extend our respect to all First Nations People, and their land, where we gently make our beer, using produce grown on it, and waters flowing through it, with gratitude.

We have a clear focus on Brewing beer in season using local seasonal ingredients; reducing our impact on the environment through the choices we make around ingredients, process, and packaging; and producing the freshest and best quality beer available.  
Beer is traditionally a seasonal product like wine. Brewers were historically often farmworkers who used their local barley, hops, spices, herbs and native airborne (and domesticated) microbes to make beer during the quieter and cooler times of year. When fruit was in abundance, they might even throw some into a barrel and let the goodness infuse. We are starting to see a resurgence in these practices with beer crafted and nurtured over several years through barrel aging, with or without fruit, and then perhaps blended together to refine flavours and produce something exquisitely unique and complex. Cosmo has both a barrel aged beer project and fruit beer project underway, and we are excited to anticipate the first bottled releases of these beers later in 2023. 

Our ingredients are single source where possible so we can form close working relationships with producers to understand and appreciate their products as best we can. Malted Barley is the main ingredient in beer and is all sourced from Voyager Craft Malt in The Riverina. Cosmo is committed to promoting regenerative agriculture practices and is using a significant quantity of Organic Malt.

The Pilsner uses 100% Organic Malt. Our Hops are from several sources including a small commercial grower near Bega, Ryefield Hops, who practice chemical free farming and cover cropping for natural fertility and promotion of beneficial insects. Bathurst has an early history of hop growing during European settlement as a temperate climate is required for their cultivation. Inspired by this fact Cosmo has a small hop growing collaboration underway deep in the hills around Bathurst. Our aim is to grow enough hops to produce our full range of beer. 

We are committed to reducing waste in the environment, particularly single use plastics, and make a concerted effort to avoid any kind of waste product wherever possible. Our beer is currently only available on tap at venues who share our passion to support local producers. We showcase our range monthly at The Bathurst Farmers Market at The Bathurst Showground (4th Saturday of each Month) and Tarana Community Farmers Market (4th Sunday of each Month) where we dispense beer fresh and cold from kegs into re-useable glass bottles – which customers can re-fill at Cobb and Co Cellars if they get thirsty in between markets! 

By producing small batches and always storing our beer cold we continue to supply our thirsty locals with the freshest beer on the market. By brewing natural beer without any additives, filtering, or pasteurization, and with close care and attention to detail in process, we continue to produce top quality beer for our community.
